I don’t know about you but my Mom never packed my lunch when I was a little kid—she just handed me lunch money everyday. I never experienced the excitement of opening up the bag to see what goodies awaited me inside. But, oh my, I can’t imagine anything she made could have topped what they’re cooking up at the Brown Bagger Food Truck in Pensacola!
Native Pensacolian Tim Thompson and his business partner Ellis O’Neal launched their food truck in January 2021 and they’ve been on a roll ever since.
You’ll find their yellow truck parked on N.12th Ave on the edge of East Hill near the majestic oak alley.

Step on up to the window and order your burger your way.
They specialize in smash burgers made with premium wagyu beef.
I ordered the crowd favorite gouda burger—1/4 lb. wagyu beef patty, shredded gouda, bacon and fixins’ on a freshly baked potato bun.
I added their special Bagger sauce and my burger was yummy, juicy, and decadent!
There’s no freezer on the truck so you’ll know that everything is fresh and made to order.
The fries, my personal kryptonite, are hand-cut and twice-fried! They get up extra early to cut the fries and after one bite…you’ll thank them for the effort. Don’t forget the dipping sauces!
There’re veggies too… so what if they’re fried?… A little.
These babies are what the guys affectionally call Bangin’ Brussels. They’re sprouts covered in shredded gouda, crumbled bacon and balsamic glaze.
Not in the mood for a burger? Try their salads, wraps, and chicken fingers.
Thompson says he didn’t anticipate the satisfaction he’d get from seeing friends he grew up with dropping by for a burger and to catch up. He also appreciates the community support.
He’s helping to create jobs too. Future plans are to buy a mobile food truck so they can serve their burgers around town.
Added bonus-the truck is parked next to the Wisteria Bar so you can grab a cold one and listen to live music at night.
